Whole beans in a sealed valve bag. Fresh off the roaster they rest about a week and a half to let the CO₂ settle; from there they are at their best, and sealed they hold their character for a couple of months. Once you open the bag, use them within a few weeks — and grind right before you brew.

Brewing recommendation

An omni roast with no strong preference. Pull it as espresso for a syrupy, fruit-forward shot, or brew it as filter to let the berries and stone fruit open up. Below is where we start; adjust to your grinder and taste.

Coffee and clay aren't so different. Both begin as raw materials and become something else through time, water, heat, and experience. Change one variable, even slightly, and the result changes with it. Neither can be rushed.

That's probably one of the reasons why coffee led me to ceramics in the first place. And today I choose the coffee the same way I make the ceramics: from people, and for people, who care about the process as much as the outcome.
